The important first edition of the work that established the science of nutrition and presented the "first classification of the organic food-stuffs and the process of nutrition" (Garrison & Morton).

In this work Liebig, "unquestionably the greatest chemist of his time" (Partington),"carried his chemical investigations into the realm of animal physiology. He showed like Lavoisier, that animal heat is not innate, but the result of combustion; introduced the concept of metabolism (Stoffwechsel); and classified animal foodstuffs as fats, carbohydrates and proteins according to their function. He thus became the founder of the modern science of nutrition." (Percy H. Muir).
